Baked fish | Halibut Recipes



Ingredients:
Pepper
Butter 60 gr
Flour 30 gr
Halibut (Greenland) 6 piece
2 tablespoons breadcrumbs
Potatoes
Sale
2 tablespoons fresh lemon juice
Egg number 2
Fish soup 3:50 dl
Salt 2 tbsp.

Preparation:

Spread over 6 halibut steaks (frozen in specialty shops) 2 tablespoons coarse salt and place in refrigerator for 2 hours, then drain the water that will be formed on the bottom of it, pass it under cold water to remove salt and dry them very well. Dissolve oz. 40 of butter in a saucepan, add gr. 30 flour and toast it in the sauce, stirring constantly. Pour dl. 3.5 fish broth (or vegetable) econtinuate cooking, without ever stopping to stir until the sauce thickens. Season with salt and pepper eaggiungete 2 egg yolks and 2 tablespoons of lemon juice. Butter a baking dish, disponetevi the fish, cover withthe sauce and sprinkle 2 tablespoons of bread crumbs and butter. Bake in preheated oven at 180 degrees for 20-25 minutes. Serve hot, accompanied by potatoes fried crispy matches.
