Halibut roulade | Halibut Recipes





Ingredients:
Rice 120 gr
Pepper
1 clove garlic
Halibut (Greenland) 8 slices
2 tablespoons extra virgin olive oil
50 g dried tomatoes
Rocket
Sale
Zucchini 400 gr

Preparation:
8 slices of smoked halibut
400 g zucchini trumpet (Liguria)
120 g Arborio rice
50 g of dried tomatoesa tuft of arugulaa clove of garlic
2 tablespoons extra virgin olive oil
salt, pepper

1) Boil the rice in salted water until al dente drain it and spread it in a pan to remain cool grainy. Cut the zucchini into julienne strips, add salt and sautĂ© in a pan without condiment, for a couple of minutes. Blend the dried tomatoes with garlic and arugula.
2) Dilute the mixture with a tablespoon of water, season with salt and pepper, pour the oil and emulsify thoroughly. Mix the rice with zucchini slices and stuffed halibut, forming rolls and cut in half. Serverolls accompanied by the sauce with rocket. Complete the dish with beet salad with fresh mint.
