Grilled halibut with mango sauce | HalibutRecipe

Preparation time: 20 minutes plus marinating time

SERVES 4

• 600 g fillet of halibut or turbot• extra virgin olive oil• salt• white pepper• a few slices of orange and lime for garnish• 2 ripe mangoes are not too• juice of 1 / 2 lime• 5 tablespoons orange juice• 3 sprigs parsley• extra virgin olive oil• salt


PREPARATION
Cut the halibut fillet into slices of about 150 g each, put them in a bowl, season with 2 tablespoons of olive oil, salt and white pepper to taste and let marinate a few minutes and season.
Peel the mangoes, cut into thick slices discarding the core and then into cubes. Chop the parsley leaves.
Prepare the sauce: Heat 2 tablespoons oil in a saucepan, add the diced mango and fry over a gentle heat for about a minute, then add the filtered juice of citrus fruits and 4 tablespoons of warm water. Add salt and cook gently for 5 minutes, then mash half a sieve (or frullatela).
Cook the slices of fish on hot grill for about 4 minutes on each side, then divide it into individual dishes. Season the fish with mango salsa and lime and serve, garnishing each portion with parsley and slices of lime and orange.
